Kalamata olive tapenade

The Kalamata olives used for this tapenade come from the same groves as our olive oil. When the olives are ripe, they are hand picked, washed and brined patiently in salt. After pitting, their skin is removed and then they are chopped, minced and mixed with our extra virgin olive oil.
