Kalamata olives are the best known variety of Greek olives. These are from the same farm in the Peloponese that produces the extra virgin olive oil we sell. Do not refrigerate your olives, keep them in a cupboard (make sure they are completely covered in the brine with a layer of olive oil at the top to prevent fungus growth).
